I am no cook, I usually go for micro meals, take away and beans on toast but this was easy to make and well worth the extra effort.

The mustard seeds, ground fresh ginger and spices |

Spinach |
Potatoes |
The mustard seeds, sunflower oil and spices |
In with the potatoes |
Add the vegetable stock and simmer |
Add in the tomatoes and coriander |
I chose to add some spinach here too |
Looks, smells and tastes delicious |
