Bombay potatoes

I made myself Bombay potatoes using this recipe, I left out the yoghurt though.  It was really good and I will be having it again.

I am no cook, I usually go for micro meals, take away and beans on toast but this was easy to make and well worth the extra effort.

The ingredients minus the potatoes

The mustard seeds, ground fresh ginger and spices

Coriander

Tomatoes

Spinach

Potatoes

The mustard seeds, sunflower oil and spices

In with the potatoes

Add the vegetable stock and simmer

Add in the tomatoes and coriander

I chose to add some spinach here too

Looks, smells and tastes delicious
