Honey flapjacks

I have never cooked so much in my life.  Must be something to do with the vegetarianism ;)

I used this honey flapjack recipe and I think it worked really well, see below and let me know what you think.
400g of porridge oats

200g demerara sugar
200g of butter (I used dairy free)

200g of honey from Calcott Hall (tip on how to measure this below)

All the ingredients together

To weigh out the honey, weigh it first in the jar

Put the jar in a bowl of boiling water for 30 seconds

Pour out the honey

Weigh the jar again and work out how much you have used.  Repeat till you have 200g

Put the honey, sugar and "butter" in a pan and apply heat slowly

Stir occasionally

Don't turn the heat up to fast or it may burn

When the butter is melted and the sugar dissolved, turn off the heat

Grease a baking tray and add some grease proof paper

Mix the outs into the sugar, honey and "butter"

Add the oats a bit at a time

Keep stirring till all the oats are coated

Transfer the mix to the baking tray and smooth with a spatula or spoon

When levelled put it in the oven, gas mark 4 for 15-20 minutes

Remove from oven when golden brown.  Leave to cool then cut into portions
